How do you know it you’ve met Mr. or Mrs. Right—the one true love of your life?

Now that’s the question of the century. Sometimes you know right away with a “zing” goes the heart strings. Sometimes you don’t know until certain dramatic things happen in your lives. And sometimes true love is revealed only after the loved one is gone. I saw all three of these in the lives of my parents.

Let me tell you a story about my parents, who apparently got it right.

My parents met after WWII, right before Dad was going to enlist in the Foreign Legion. He came to visit Mom’s uncle. Mom peeked at Dad from behind a newspaper during that visit and her interest in him was obvious enough that he asked her on a date. Their courtship was a short one. They met in October and by Thanksgiving the following month they were married. All Dad’s family said, “Don’t marry him. You don’t know what you’re getting into. He drinks. He gambles. He carouses around with his brother.” But ‘Love is blind.’ And Mom didn’t listen to the naysayers. That’s the “zing” goes the heart strings moment.

The dramatic happening for my folks occurred early on in their marriage. True to the warning of his family, Dad did drink and gamble and run around with his brother, leaving Mom at home with two small children. After about two years of this kind of behavior, Mom gave Dad an ultimatum. “It’s me and your daughters or carousing with your brother. You can’t have both. Choose what you love most,” she told him. Dad chose us. He walked away from his old life and built a life around his family.

It took the remainder of their lives together to discover the last expression of love.

Dad was a meat and potatoes kind of guy. Dinner fare for us was always a meat, which ran the gamut from pickled pigs’ feet and cow brains to fried chicken and smoked pork. Some form of potatoes (usually fried) sat next to the meat platter. Then green beans and another vegetable filled out the menu. We’d often have bread, too, from sliced store-bought bread to homemade cornbread or biscuits. Dessert was rare and saved for company. Without fail, meat, potatoes, green beans and a second vegetable appeared on every dinner table.

No matter what combination of those four dishes Mom put on the dinner table, Dad ate it. He wasn’t choosy about what meat Mom served, or how the potatoes were fixed, or what alternate veggie she served beside the green beans. He ate it all, and as I remember it, with gusto. In all the years I sat at the table with them, eating Mom’s down-home meals I never once heard Dad complain about or critique Mom’s cooking. I thought he loved everything she made, even though I always didn’t.

Then, in 1987, Mom died of complications from pneumonia. After the funeral Dad was wandering around the house saying, “You girls should take this, or this. It belonged to your mom and I can’t look at it now that she’s gone.” We obliged him and took the offered items, because, as I’ve since learned, guys can’t deal with looking at stuff that belonged to their deceased wives.

When Dad walked into the pantry where Mom kept all her home-canned goods, he said, “Take all these green beans home with you.”

“I can’t take food off your table, Dad,” I protested.

“I hate green beans,” he replied.

I’m sure my mouth dropped open, because it still does when I think of this story. “But you ate them almost every night,” I said. “If you hate them why did you eat them?”

“Because your mother served them.”

For thirty-seven years and four months, my father ate a hated vegetable every day just because Mom served it. And he ate it without letting anyone at the table know he hated green beans. Now, if that isn’t true love, I don’t know what is.

The other day I wanted a quick easy meal, so I peeked into the pantry to see what I had on hand. I found cans of chicken, green chiles, corn, black beans and cream of chicken soup, and some tortillas, so I set out to create something. Here’s what I came up with. We liked it, and I hope you will too.

Quick Oven Quesadilla

Ingredients: 

  • 2 12.5-oz canned chicken, drained and broken up
  • 1 4-oz can diced green chilies
  • 1 2.5-oz can sliced black olives, drained
  • 1 15-oz can black beans, drained and rinsed
  • 1-11-oz can whole kernel corn, drained
  • 1/2 can cream of chicken soup
  • 1/4 or less cup water (start with a smaller amount. You only need enough water to allow the condensed soup to mix with the other ingredients )
  • 1 cup finely shredded Mexican style cheese.
  • 1 to 1 1/2 teaspoon taco seasoning, or to taste if you like it spicier.
  • 1 cup shredded cheddar cheese
  • 2 high-fiber large tortillas (or corn tortillas) or  enough to fit a straight sided cake pan, or 2 high-fiber street tacos to make individual servings in a smaller pan

Directions:

  • In a skillet over medium high heat brown the tortillas on both sides.
  • While tortillas are browning, mix chicken, corn, beans, chilies, olives, soup, cheddar cheese and water. Heat the mix in a large saucepan stirring until well mixed and beginning to bubble.
  • Lightly spray the bottom of a cake pan or baking sheet. Lay one tortilla in the pan, top with about 3/4 cup mix (for a large tortilla, less for smaller tortillas) onto top of browned tortilla, spreading mix almost to the edge. Top with 1/4 cup of finely shredded Mexican cheese.  Repeat with other tortilla and 3/4 cup mix. (You will have mix left over for another day’s use, or you can double the tortillas and make a bigger meal the first time)
  • Bake in 350 degree oven about 10-15 minutes or until cheese on top has melted and you can see filling bubbling. (I’ve also baked this for a shorter time at a higher temp when was in a hurry.) Turn off oven and switch to the high broil setting on the oven and broil until cheese on top begins to brown.
  • Remove from oven. Cut and serve with shredded lettuce, chopped tomatoes, onions, guacamole, salsa or other Mexican side toppings.

If you want to make several stacks at a time lay the base tortillas on a baking sheet and assemble as many as your ingredients allow. Number will depend on the size of your tortillas.

If you only make one stack, or 2 smaller individual servings, the first time you can use the remainder of the filling for a second quesadilla meal or as filling for enchiladas. It will make about 4-6 enchiladas depending on the size of your tortilla. Warm your ingredients before assembling the stacks or enchiladas to cut down on heating time in oven. Make a cheese sauce, or other Mexican sauce to cover the enchiladas and top with shredded cheese. Heat in a 350 degree oven until cheese has melted and is beginning to brown.

While Ohio is mostly opened up from Pandemic status, I hear lots of newscasters asking “When will we get back to normal again?”

This question now is mostly related to the economy, workers going back to work, restaurants having their normal hours and normal menus back, schools and businesses being fully opened again, hospitals, airlines and nursing homes going maskless, and whether a new wave from a variant virus will set us back to 2020 shutdown status again.

There is, however, one thing that has come back to normal in record speed—Scamming and Phishing!

I’ve talked about phone scamming and phishing in the past, but I received a couple of calls that I think bear repeating. This past week or so our phone has gone nuts with scam calls. I received a call from a local hospital where my sister had been admitted a while ago. Not thinking about scamming, but wondering instead if she was in the hospital, I answered the call. It was a Medicare scammer. I bawled him out and hung up with a threat to report him to the FCC.

I had another interesting and doozy of a call the other day from Beverly Hill, California. I didn’t answer, but they left a voice-mail message. Our voice-mail system forces us to listen to the messages in order to clear them. Most of the time they are truncated messages that don’t give us much of a clue as to what the caller wants. As I punched the replay button that day, a computer-generated voice said. “Sorry. You did not reveal yourself to be human.”

If that’s not the pot calling the kettle black, I’ll eat my garden hat! It’s too bad all the other scam phone calls don’t recognize my computer-generated message isn’t worth their time as well. That would solve my constant ringing phone issue.

Shucky beans from my freezer

Some of my fondest childhood memories are of visiting my grandparents down on their farm.

Mom and Dad would pack us up in the car after Dad got home from work and we’d drive down into the hills of Kentucky for the weekend.

The house would always be dark when we arrived. Grandma and Grandpa didn’t have a phone, so they were never expecting us on our weekend trips. It was probably only nine or ten p.m. when we arrived, but my grandparents were farmers who went to bed with the chickens the minute it got dark outside.

The moment Daddy pounded on the door, my grandparents awoke and the lights came on. After hugs and kisses, we were hustled into the kitchen for hand pies, cornbread, leftover shucky beans, and meat. It never failed to amaze me how much food Grandma had on hand, especially since it was only her and Grandpa there. The hand pies were half-moon pastries made from dried apples Grandma had preserved. The meat varied, depending on whether she’d killed a chicken or they had purchased beef from someone. The shucky beans were the item my mouth always watered for—and still does today. It’s been years since I’ve eaten them, but I remember the salty, silky texture of the once-dried bean.

You say you don’t know what shucky beans are?

Shucky beans are green beans that have been dried in the shell. Shucky beans were always on the table at Grandma’s house. In fact, I don’t remember ever eating any other kind of green bean when we visited her.

Mom and Grandma always used white half-runner beans, although I do remember Mom using other green beans when she couldn’t get half-runners. Every summer we would visit Grandma and help her preserve the veggies from her garden. Getting the shucky beans ready was something I could do as a child, because Grandma preserved her beans the old-fashioned way. She strung them on cotton thread and hung them on the back porches until they dried.

The process was time consuming, but I don’t remember minding it at all. While the black-eyed Susans nodded in the breeze at the front of the yard, I strung my pan of beans sitting on the white porch swing, listening to the chains creaking softly above me and Mom and Grandma talk. There was something satisfying about watching the green column of beans grow on the thread, knowing I was going to enjoy the taste of them in the fall and winter. Grandma always shared some of the crop with us.

Below are the quick instructions for making Shucky Beans as given to me by my mother. My additional clarification comments are in parenthesis. Notice there are no amounts given for beans: Grandma and Mom just strung them until they were all picked from the garden. From my research I’ve discovered a bushel of fresh beans makes about 1 gallon of Shucky Beans.

Grandma and Mom’s Shucky Bean Recipe

Pick white, half-runner beans when they have a bean in them. Do not wash beans. Break ends and remove the string from the beans. Using a sturdy needle and white cotton string, knotted on one end, string the beans. (Pierce the bean pod and not the bean with the needle.) When the string is almost full, tie the ends and place in a warm place to dry: an attic, porch, or in the direct sun.

(Depending on how you plan to dry them, either tie the ends together to make a circle, or make a loop in one end, so they can be hung on a nail. You could also just knot the other end and drape over a clothes line.  I know Grandma hung hers on the back porches, but I’ve read about other cooks drying their beans on sheets laid on patio tables, car hoods, and even spread in the back window of a vehicle. If you don’t want to do this the old fashioned way, you can use a food dehydrator. I actually dried a few of them last year on a rack on the kitchen table. I stored them in a glass jar. I haven’t cooked them yet. I just like to open the pantry door and look at them. I t reminds me of Grandma and those lazy summers as a child.)

Once the beans have dried, they can be stored in the freezer in plastic freezer bags. Just be sure they are really dry before you store them. (When you can run your fingers through a batch and hear a rattling sound, reminiscent of the sound dried corn shucks make, beans should be dry enough to store.)

To Cook: Place the beans, strings and all, in a pot and boil for 30 minutes. Drain the water and rinse the beans. Take them off the strings and place in a clean pot with more water and seasonings. (A cottage ham or slab of bacon works well as seasoning). Cook until tender. (About 2-2 ½ more hours.)

Some recipes call for the beans to be washed before stringing.  Grandma didn’t use pesticides, so she didn’t have to worry about chemicals. If you wash the beans before stringing, make sure they are hung where the air can reach all sides to prevent spoilage. Other recipes also suggest removing the beans from the string before boiling. I’m not sure which method works best, since I can’t recall what I did the one time I cooked the beans.

Traditional Carbonara has an egg and cheese sauce added to the spaghetti just before serving. I don’t care for eggs added to things at the last minute, so I eliminated the eggs and sauce and came up with my own version of Carbonara. I hope you’ll like it as much as we do.

Zucchini Spaghetti Carbonara ala Catherine

Ingredients:

  • 4 ounces whole wheat spaghetti (or you can use edamame spaghetti for a dish with more fiber in it)
  • 2.5 ounce can of sliced black olives, drained
  • 1 cup diced or chunked  ham
  • 1 medium zucchini, cut lengthwise and then thinly sliced
  • ½ grated Parmesan cheese
  • 6 slices thick bacon

Directions:

  1. Divide bacon into 4 and 2 slices. Prepare 4 slices for microwaving by placing between 2 paper towels on a microwave safe plate. Microwave for 3 minutes until crisp. Remove from paper while still warm and crumble.
  2. Dice remaining 2 slices and place in a large skillet, cooking until crisp.
  3. While bacon is cooking, boil water for spaghetti and cook as directed on package until pasta is firm. Drain fully when cooked.
  4. While pasta is cooking, sauté zucchini with diced bacon until zucchini is tender.
  5. Drain any excess liquid from the pan.
  6. Add olives and cooked drained spaghetti to zucchini and bacon, tossing to mix.
  7. Remove from heat and add parmesan cheese, tossing quickly to keep cheese from clumping.
  8. Top with crumbled bacon and serve.

Makes 2 generous main dish servings or 4 side dishes.

Note: additional cheese may be sprinkled on top of pasta after serving, if desired.

The other day I made some chicken breasts in the crockpot in anticipation of making a batch of chicken pot pies. I threw in a couple extra boneless breasts, and hubby and I went out to run some errands. When we got back later that afternoon we were hungry and the scent of chicken filled the house.

“What’s for dinner?” hubby asked.

I decided to use some of the crockpot chicken breasts and throw together a quick White Chicken Chili with what I had in the pantry. I didn’t have enough cannellini beans so I substituted and came up with a pretty good chili, if I do say so myself. I hope you’ll think so, too.

Here’s what I had in the pantry to make this chili.

Ingredients:

2 boneless chicken breasts, boiled and shredded

1 15-ounce can of cannellini beans (also called white kidney beans), drained

1 15-ounce can of butter beans

1 4-ounce can green chilies

8-16 ounces of chicken broth

Salt and pepper to taste

Cumin to taste if you like a hot chili

Directions:

Place cannellini beans, diced green peppers, and 8 ounces of chicken broth into a pot.

Place butter beans in a food processor and pulse until beans are mashed up.

Add to ingredients in pot and stir well. 

If chili is too thick add more chicken broth until it reaches the consistency you want.

Heat and serve with homemade cornbread and coleslaw.

Recently tomatoes have been cut from our diet. I love tomatoes and many of the recipes I cook are tomato based. Here’s the issue: tomatoes are part of the nightshade family, along with a few more of my favorite foods such as peppers and eggplants. In some people the nightshade plants make arthritis worse and eliminating nightshade foods can help keep arthritis at bay.  The problem comes when one family member loves tomatoes and the other one now has to avoid them.

There are very few, if any substitutes for tomatoes, so I’ve been on the hunt for ways to make my favorite dishes without tomatoes for the non-tomato eating half of our family, yet please the tomato-loving member. It’s been tough, especially with chili season upon us.

So, I set out to conquer the problem. Here’s one of the recipe I came up with: No-Tomato Crockpot Chili. I hope you’ll enjoy it.

No-Tomato Crockpot Chili

Ingredients:

  • 1 pound ground beef
  • 1 can beefy mushroom soup (I used Campbell’s soup)
  • ½ large onion, diced
  • 2 cans of beans with the canned liquid. The bean liquids help make up for the loss of the volume of the tomatoes. You can use seasoned or unseasoned chili beans, black beans, pinto beans, kidney beans, or lentils. Your choice and you can mix and match beans types.
  • 1 small can diced chilies, if the non-tomato eater can eat them without issues
  • One garlic clove, diced (optional)
  • Chili powder to taste
  • ¼ cup water, or less if you want a thicker chili
  • Salsa, your heat preference for the tomato-eating family members
  • Cheese for topping (optional)
  • Spaghetti (optional)

Directions:

  1. Break up ground beef in a large skillet and brown along with the diced onion and garlic.
  2. Add beans and bean liquid, diced green chilies, soup and water to crock pot. Stir to mix well.
  3. Drain beef mixture of fat and place in a crock pot. Stir to mix
  4. Cook on high for 2 hours or until hot, or on low 4-6 hours or until hot.

At serving time, place spaghetti in bottom of bowl and add beef chili.  For those who can eat green chilies and tomatoes, top their bowls with ¼ to ½ cup of salsa and 1 teaspoon of green chilies to each cup of the beef-soup-based chili.  Stir lightly to combine.

I got a new iPhone after Thanksgiving and, quite frankly, I’m ready to throw the thing across the room. Or maybe even in the nearest river!

To start off, I didn’t get the last of my five email boxes cleaned out. As soon as we transferred the email addresses over, the last email box began filling. And filling. And filling. Every time I read and deleted a new email, 100 more would come over.

When it reached 900+ I said to Hubby, “I’m shutting this phone down before it loads all 5,000 + unread emails.”

I spent the next five hours hunched over the computer keyboard deleting the unread emails down to about 84. Then I deleted the 15,000+ deleted emails left on the server just to be sure they didn’t come back. Better to be safe than sorry, as Hubby as seen a few of his deleted emails return to unread status and pop up on the iPhone. Yes, I know, I can’t blame the iPhone because I didn’t clean out my online mail inboxes and trash. But this was just the beginning of the iPhone misadventures.

Unlike my beloved Blackberry, there’s nothing intuitive about this iPhone. Swipe right, swipe left, touch right, touch left. Swipe from the upper corner, tap on the bottom, touch here, touch there. Push partway up and to the right to see where you’ve been on the internet. Swipe up to trash something, or click right, or left depending what app you’re in. Yikes! Who can remember all that?

Additionally, my finger either doesn’t work or I don’t even touch something and stuff flies off or onto the screen. Once, while merely holding the phone, a box popped up with the message, “To reverse this action, tap the screen with three fingers.” What action? What had I done? What had I erased? Fortunately, the screen told me which fingers to tap with, so I tapped. And tapped. And tapped. The screen didn’t move. It didn’t tell me the unknown action was reversed. I couldn’t even see a back button.

“Honey,” I yelled. “Think I did something wrong!” By the time Hubby came to the rescue I’d punched enough things that the screen was back to what I recognized. Only heaven knows what I might have screwed up!

For every action I did on the Blackberry with one touch, it takes two, or maybe three or more on the iPhone. I’ve read some of the instructions, and tried to search things out on the iPhone book, but apparently I don’t know the new lingo well enough to find things. And I’m usually pretty good with searching. However, nothing seems to have the same names as the Blackberry did.

My texts to my daughter are filled with strange words that I didn’t type, courtesy of predictive typing. I tried to type PTL (Praise the Lord) and it came over on the text as “Pyle.” The words But I came across as “Bilirubin.” And the text screen, filled with facial icons, bubbles holding your text message, and sometimes giant emojis, takes up so much screen space that I can’t easily see the text thread. When my daughter retyped “Bilirubin” I thought SHE had typed the word, not me. I had no idea she was rolling on the floor laughing until the next day when I scrolled up the text stream and saw what I’d done.

And if you think that’s wild, wait until you hear these next items.

The other day, using my iPhone, I tried to call my hubby, who was driving my car. I knew he wouldn’t try to answer his new iPhone, so I called my car phone.  At the same time the car phone was ringing, I heard another call beep in. I ignored it, thinking it was a phishing call. Hubby never answered, so I hung up and called him again. The same thing happened. So, I hung up again. As I pulled the phone away from my ear, the second time, my daughter’s name scrolled across the banner on the top of the phone, indicating she was calling.

When I answered, she said in a concerned voice, “Mom, is everything okay. Why are you calling me so much?” (I never call her during work hours.)

“I wasn’t calling you. I was trying to call your dad in my car,” I said.

As she hung up I heard her say to someone, whom I later learned was her boss, “It’s okay. There’s nothing wrong. My mom has a new phone.”

When my hubby got to his destination, he called on his cell to see what I needed. He  couldn’t remember how to answer my car phone. It doesn’t have Bluetooth pairing like his car. He received my cell phone call on the car phone and, at the same time, my daughter also received a call from my cell phone.

The stupid iPhone called my car phone, while husband was driving it, and called my daughter at the same time.

Here’s the kicker—I did NOT call my daughter’s cell. No way. No how. Not even possible. I swear I never touched her number. I clearly, and positively, know I called my car phone. Yet the iPhone showed it made both calls.

The phone somehow dialed both numbers at the same time! How is that even possible?

Stupid iPhone!

Later in the day I was having a conversation on our home land line when my cell rang. It was my daughter.  I knew it was her because I’d attached an ‘Oogah Oogah’ old car horn sound to her calls. An unmistakable and very loud sound. I answered and quickly said, “I can’t talk now. I’ll call back in a few minutes.” Then I hung up. A few minutes later I got another call from her on my cell—the same “Oogha-Oogah ring, but it was my son-in-law on the other end. “Can I call back?” I asked. “I’m in the middle of another call.”

Son-in-law said, “She can’t talk. She’s on the house phone with her mother-in-law.”

 “Then why did she call me just a minute ago?” I asked.

Son-in-law calls out to my daughter, “Why are we calling your mother?”

In the background I hear her say, “I didn’t call her. She called me! Twice!”

I know I didn’t call her. The iPhone log showed she called me. She still swears she didn’t call but that I called her.

Stupid iPhone!

Earlier that same morning I was trying to comment on a blog I’ve always had access to on the Blackberry. I’d reached the site via clicking on the title of the blog I’d received in my Catherine Castle mail inbox. The site kept kicking me off. I couldn’t like, share, or comment. So, I went back to the original email, which was still open on my email inbox, and scrolled down to the like button. Click—and I was over to the page instantly, all nicely opened. While complaining to my husband about the wretched phone’s behavior, I slid my finger down the screen to check for my author icon. I wasn’t there, but our joint author icon was.

“Did you just comment on her page?” I asked.

“No,” he said. “I was just headed over there right now.”

I rotated my phone screen so he could see it. “You’ve already commented.”

He squinted at me. “Did you open our author email and like the post? Because I did not like that post.”

“I didn’t!” I protested. Although, in all honesty, I sometimes have a problem and click the wrong email box on my phone. I did it with the Blackberry quite often by mistake. So much so that hubby’s threatened to take our joint author email off my phone.  He leveled a glary squint at me, not at all convinced I knew what I was talking about.

I switched back to my Catherine Castle email box. The email in question was on the top. I scanned it again. In the To: line it didn’t say Catherine Castle. Instead it had my husband’s name. Somehow the email addressed to his personal email box (which is another glitch I’ll not go into), got scrambled and put in my author email box and linked our joint author photo to it.

Stupid iPhone!

I could go on with my misadventures with the stupid iPhone, which I’m sure will continue until my weary blonde brain figures it all out or I end up in the funny farm. However, I’ve already exceeded a thousand words on this rant.

On the bright side, there are a couple of things I do like on the iPhone. I did discover one useful tool. I accidently deleted an email one evening and moaned in distress over my actions.

“Shake it!” Hubby said.

“What?” I replied.

“Shake it! Shake the phone!” he yelled urgently.

Bemused and befuddled, I did as he commanded, although I hadn’t the foggest idea why. An icon popped up on the screen.

“Now, tell it to untrash,” he said. “Hurry before the icon disappears.”

I did, and, Lo and Behold, my trashed email reappeared like magic.

Pretty cool for such a. . . Stupid iPhone!

I can also draw pictures in my emails. A feature that I’m sure will be a giant time suck. I’ve already drawn and sent pictures to my daughter, and I’m considering how I can use this tool for Christmas email cards.

Twitter works again and so does Pinterest. So I can waste endless hours surfing instead writing, cleaning and practicing the piano. Although piano is never a waste of time. It’s more of a joy.

Hopefully, as time passes, I’ll find more to like and less to complain about. One thing is for sure—as I learn this new device I’m giving my family and friends lots to laugh about.

Catherine’s Comments—An Elegant Poinsettia Themed Table Setting from Catherine Castle

The table decorating elves have been busy at my house with a new place setting for your holiday meals.  Unlike the playful setting of last week, the elves and I decided to go for an elegant, poinsettia theme this Friday. Since red is the classic poinsettia color and gold makes for an elegant contrast to red, the elves and I chose the colors red, gold, and white.

Layering has been the part of Christmas theme so I started with a white table cloth. Searching through my placemats I added red and gold plastic poinsettia placemats topped with either a red or white contrasting plate. Don’t be afraid to use plastic items if they look elegant. A poinsettia napkin, placed so the flower shows, carries the flower theme onto the plain plates.

I dug through my candleholders and found a pair of heavy, square gold glass candle holders and then I paired them with tall red candles. I didn’t like the effect of the gold against the white table cloth, so to make the gold pop, I opened up a paper poinsettia coaster and placed the candles on top. If you don’t have a paper poinsettia coaster you could use a red napkin or, if you’re crafty, cut a poinsettia from construction paper.

If you don’t have gold candle holders search through your Christmas decorations for any gold items you might have. A strand of gold, or gold and red, beads artfully laid or looped around the base of glass candleholders would carry the gold theme onto the centerpiece. Or place your candle and holder in a white bowl or saucer and surround the candle with red and gold ornaments. To keep wax from dripping on the ornaments you might want to place a wax catcher, known as a bobeche, at the base of the candle.  

Clear glasses to mimic the effect of crystal completes the setting.

There’s nothing that says Thanksgiving to me like the classic song Come, Ye Thankful People Come. I played it in church for the first time last Sunday and that’s when it felt like Thanksgiving had arrived. I tried to embed a YouTube version so you could hear the music, but WordPress and YouTube aren’t talking. So I’m posting the lyrics instead. I hope the song will lift your Thanksgiving spirits and help you to remember to be thankful this year, in spite of all the bad things we’ve endured.
