Many Americans cook this meal as a traditional St. Patrick’s Day meal, which is only a St. Paddy’s Day tradition in the good old USA. You’ll never find corned beef served anyway on the Old Sod. That’s right. Our Irish brethren look at us in amazement, but that’s never stopped us Yanks from creating traditions. Here’s another news flash. You don’t have to reserved Corned Beef for the wearing o’ the green. So get out your pots and enjoy this non-traditional non-Irish meal from cookbook author Slaone Taylor anytime of the year.

MENU
Corned Beef
Cabbage
Carrots
Potatoes
Bakery Rye Bread
Horseradish Sauce
Mustard
Irish Beer and plenty of it

Corned Beef

1 5lb. corned beef brisket*
2 med. onions, peeled and quartered
4 peppercorns
1 bay leaf
3 bottles of beer, not Lite
water to cover

Preheat oven to 300 F°.

Place beef in a Dutch oven. Add remaining ingredients, including spice packet that comes with the beef.

Bring to a boil on stovetop. Place in oven and roast for 3 hours or until meat is fork tender.

*Don’t stint on the beef. It cooks down to approximately half. I learned this lesson the hard way.

Here’s a tip from my butcher Raoul. Always buy corned beef flat cut. It has less fat than the point. Therefore you get more meat for your money.

Vegetables
6 med. red potatoes, peeled and quartered
6 carrots, scraped and cut into 2″ pieces
1 celery stalk, cut into 2″ pieces
1 med. green cabbage, cut into 8 wedges
1 cup corned beef cooking liquid
water

You can prep all the veggies and store in a large container covered by cold water until you’re ready to cook them. Refrigerate so vegetables remain crisp.

Place veggies in a large pot. Stir in corned beef cooking liquid. Add water to cover vegetables by 2 inches. Cover pot. Set cooking temp at medium. Bring to a boil. Reduce heat so the pot doesn’t cook over, but maintain a soft boil. Cook about 30 minutes or until veggies are fork tender.

Horseradish Sauce

1 cup sour cream
2 tbsp. prepared horseradish
1 tsp. fresh chives, snipped short

Combine all ingredients in a medium bowl. Stir well.

Transfer to a serving dish, cover, and refrigerate until ready to serve.

The other day I made some chicken breasts in the crockpot in anticipation of making a batch of chicken pot pies. I threw in a couple extra boneless breasts, and hubby and I went out to run some errands. When we got back later that afternoon we were hungry and the scent of chicken filled the house.

“What’s for dinner?” hubby asked.

I decided to use some of the crockpot chicken breasts and throw together a quick White Chicken Chili with what I had in the pantry. I didn’t have enough cannellini beans so I substituted and came up with a pretty good chili, if I do say so myself. I hope you’ll think so, too.

Here’s what I had in the pantry to make this chili.

Ingredients:

2 boneless chicken breasts, boiled and shredded

1 15-ounce can of cannellini beans (also called white kidney beans), drained

1 15-ounce can of butter beans

1 4-ounce can green chilies

8-16 ounces of chicken broth

Salt and pepper to taste

Cumin to taste if you like a hot chili

Directions:

Place cannellini beans, diced green peppers, and 8 ounces of chicken broth into a pot.

Place butter beans in a food processor and pulse until beans are mashed up.

Add to ingredients in pot and stir well. 

If chili is too thick add more chicken broth until it reaches the consistency you want.

Heat and serve with homemade cornbread and coleslaw. 

Makes 4 1-cup servings

This quick recipe is ideal for those days you are too busy to fuss. Add a salad and a loaf of crusty bread to round out dinner. After
you assemble all the ingredients on your counter pop open a bottle of Soave white wine from the Veneto region in Italy to enjoy while you cook. It’s perfect for this meal.

Linguine with Artichokes and Leeks
2 medium leeks, white and light green parts only
2 12-ounce jars marinated artichoke hearts in oil
3 tbsp. olive oil
1 tbsp. lemon juice
3 tsp, kosher salt less will not disturb the flavors
1 tsp, freshly ground black pepper
1 pound linguine
½ cup freshly grated Parmesan

Halve the leeks lengthwise and cut into 1-inch pieces. Wash well to remove any sand grains.

Cut the artichokes lengthwise if large.

Heat the olive oil in a large skillet over medium-low heat, add the leeks, and cook until soft but not browned, stirring frequently, about 5 minutes. Remove the leeks from skillet and set aside.

Increase heat to medium and add the artichokes. Cook about 3 minutes stirring often.

Return the leeks to skillet and toss to mix. Stir in the lemon juice, salt, and pepper.

Cook the linguine according to the package directions, reserving ½ cup of the pasta water.

Transfer pasta to a large bowl. Add vegetables and toss with half the Parmesan cheese. Add a little pasta water to moisten if necessary. Sprinkle with the remaining cheese.

After all the rich food of the Christmas season,  I thought it would be nice to share a homey meal of salmon patties with the readers today. This is my mother’s recipe, and quite frankly, I love it so much that I always put a few patties aside for breakfast. I even eat them cold. As kids, and when I could eat more carbs, these were served with white rice and gravy made from the oil and patty drippings left in the pan. Nowadays I choose a more carb friendly side.

I hope you’ll enjoy these salmon patties from the kitchen of Catherine Castle

Ingredients:

1 can 15 oz. can of pink salmon, drained. Bones and skin included in recipe

2 eggs, lightly beaten

1/2 cup finely diced onion.

1 cup finely diced celery

1/4 cup yellow cornmeal. 

Directions:

Drain salmon, leaving bones and skin in bowl. Add eggs and veggies and mix well. Add cornmeal and mix well.

Heat 1-2 TB oil in skillet until it shimmers. Form patties using a 2-inch diameter spoon and fry in oil until golden brown on both sides. It may take 2 batches to cook all patties and you may need to add a bit more oil as patties cook. Keep patties warm in oven while 2nd batch cooks.

Makes 12 patties

Tasty Tuesdays–Chicken Kabobs from Sloane Taylor

Quick and easy and oh so good. This is a delicious meal for two and it’s terrific when friends or family come for dinner. Simply increase ingredient amounts proportionally and you’re good to go!

Serve with Pear Salad, Sautéed Broccoli, and White Wine – Riesling.

CHICKEN KABOBS
1 – 1½ lbs. (500 – 750g) chicken breasts, skinless and boneless
1 med. onion, quartered
1 med. red pepper, seeded and ribs removed
1 med. yellow pepper, seeded and ribs removed
3 garlic cloves, pressed or chopped fine
¾ cup (180ml) olive oil
¾ cup (180ml) honey
1 tbsp. (15ml) soy sauce
Freshly ground pepper to taste
1 small can pineapple chunks, drained
10 – 16 baby bella mushrooms, stems removed
Vegetable oil for grill

Cut chicken into 1½ in. (3.8cm) pieces and then place into a plastic bag or bowl. Separate onion sections, add to chicken. Slice peppers into 1 in. (2.54cm) pieces add to chicken. Set aside.

Whisk garlic through pepper together in a small bowl. Add half, maybe a little more, this mixture to chicken. You need to hold back some marinade for basting while you grill. Cover and refrigerate 1 – 2 hours.

Coat grill lightly with olive oil. Set grill to medium-high.

Thread chicken and veggies onto skewers, e.g.: chicken, onion, mushroom, yellow pepper, chicken, pineapple, red pepper, and so on. Make sure all the pieces touch but aren’t jammed against one another. Discard remaining marinade.

Grill 12 – 15 minutes. Brush skewers with held back marinade and turn frequently so meat cooks evenly.

No skewers? No problem.

Drain chicken mixture in a colander. Heat a skillet on the grill or stove. Add reserved marinade, chicken and remaining ingredients. Sauté 12 – 15 minutes, stirring and turning frequently.

This is a good “pantry” meal–which is a dinner where you use items from your refrigerator/pantry to create a healthy, tasty dish.

My recipe was created for substitutions. Any type of vegetables will do. You can even use canned vegetables if you drain them well. Also, any type of cream soup works. I am fond of cream of celery and mushroom for pot pies.

If you do not have fresh turkey/chicken, substitute chicken in a can or even tuna in a pouch.

Let your creativity be your guide.

Pantry Pie

2 cups frozen mixed vegetables, thawed
1 cup cooked turkey or chicken, cut up
1 can condensed cream of chicken soup
1 cup milk, divided
1 cup Bisquick Original Baking Mix
1 egg

Preheat oven to 400° F.

In large bowl mix vegetables, turkey, soup, and ½ cup milk. Pour into ungreased baking dish.

In medium bowl whisk together Bisquick, ½ cup milk, and egg until blended. Spread over vegetable mix completely.

Bake 30 minutes or until golden brown.

I was born in Germany where my mother frequently filled our home with the most amazing aromas. This is one of my favorite recipes and I want to share it with you.

Rouladen – Braised Stuffed Beef Rolls
6 slices top round steak, 4 x 6 inches, sliced ½ inch thick
6 tsp. German or coarsely ground mustard
½ cup onion, chopped fine – divided
5 garlic cloves, chopped fine
3 dill pickle spears cut in half lengthwise
Freshly ground pepper to taste
Toothpicks or kitchen twine
3 tbsp. lard or vegetable oil
2 cups water
2 tbsp. flour
1 tbsp. butter

Preheat oven to 325° F.

Place meat between 2 pieces of cling wrap or waxed paper. Gently pound meat to ¼ inch thick. Be careful not to tear the meat.

Spread mustard along meat slices. Sprinkle on ¼ cup onion and garlic. Lay a pickle piece at the bottom of each roll or the narrow end.

Roll meat into a cylinder starting at the pickle end. Pierce with toothpicks to hold together or tie with twine.

Brown meat on all sides in a medium size frying pan. Lay rolls in a roaster pan.

Add water to the frying pan and bring to a boil, scraping the sides and bottom to collect all the meat bits. Whisk in four and butter. Pour this mixture over the meat rolls.

Bake 1 hour or until meat is fork tender. Remove toothpicks before serving.

If you prefer a thicker gravy, combine 2 -3 tablespoons flour in ½ cup water. Bring to a boil in a small saucepan. Cook, stirring constantly, to your desired consistency. Season with salt and pepper then stir into roasting pan gravy.

Boiled potatoes or dumplings along with red cabbage make this meal complete.

Tasty Tuesdays–Upside Down Shepherd’s Pie from Blossom Turner

Upside Down Shepherd’s Pie: Truly a Comfort Food.

I have taken this recipe to many people over the years who have needed a meal for whatever reason. The results are always the same… a heart-warming thank you for the enjoyment this tasty meal in one pan gave them, and a request for the recipe.

Note: I never just make one pan of this recipe, I double and triple the recipe as it freezes extremely well and can be brought out when needed.

DIRECTIONS

Boil and mash 4 large potatoes as you would mash potatoes with milk and butter added. Press these in the bottom of a 9×9 casserole dish or pan.

 

Peel and slice 2 large carrots and cook until tender crisp.

Cook ½ cup frozen peas and ½ cup frozen corn

Layer all veggies on top of mashed potatoes

 

Brown 1 pound lean ground beef and drain (You may add 1 chopped onion if you like onion, sauté with ground beef)

1 teaspoon salt or seasoning salt (Not both)

¼ teaspoon pepper

I teaspoon thyme.

Put back on heat and add one cup prepared gravy mix and stir until thickened, or 1 cup beef consommé with 1 Tbsp of cornstarch to thicken (you want the nice consistency of gravy.)

Layer this on top of veggies.

Add a generous topping of any grated cheese you like. I usually combine Cheddar, Monterey Jack and Parmesan, but really anything works.

Bake at 350 degrees for 30-40 minutes until cheese is golden brown and bubbly.

Enjoy this truly amazing comfort food with a bun and pickles, or any salad.

NOTE: I asked Blossom at what stage in the preparation you should freeze the pie and if it needed thawing before cooking after freezing. Here’s what she said:

“It can be frozen right after it is layered and the cheese is put on top, before putting into oven.

If brought out, yes, it’s best to thaw for the day. If I know I’m having company, I just bring it out in the morning and let thaw at room temperature and pop in the oven by evening. Cooking time will be a bit longer…you will know when it is done by having bubbly golden cheese all over.”

I also suspect you could thaw overnight in the refrigerator and bring out shortly before popping in the oven. Baking time will depend on how thawed the dish is.

Tasty Tuesdays– A Roast Lamb Loin Dinner from Eris Field

My husband was Turkish and enjoyed it when I made meals from his mother’s recipes. This was one of his favorites, and mine too because it was easy and delicious. It’s also similar to one described in my latest book The Marital Bargain: Wife for Five Months.

ROAST LAMB LOIN

Use your favorite recipe to roast lamb until done but still pink on the inside.

RAS el HANUT YOGURT

1 cup plain yogurt
1 tsp. Ras El Hanout*

Combine ingredients in a small bowl. Stir well. Keep refrigerated until you’re ready to serve.

Drizzle a small amount on the lamb at serving time.

*Ras el Hanout is a seasoning found in stores that sell Turkish or Arabic food. To make your own combine a small amount of coriander, allspice, fennel, black pepper, cumin, cinnamon, anise seed, cardamom, nutmeg, ginger, and turmeric in a bowl.

PILAF – TURKISH RICE

3 tbsp. butter
1 small onion, chopped fine
3 cups water
1 tsp. salt
1½ cups long grain rice (Riceland rice is a good choice)
2 tbsp. butter, melted

Melt butter in a shallow pot that has a cover.

Add onion and sauté until translucent over low heat. Stir to prevent browning.

Stir in water and salt. Bring to boil.

Stir in rice. Cover pan and reduce heat to a low simmer. Cook 20 to 25 minutes (Do not remove cover. Do not stir). When done, use a clean dish towel or a paper towel to replace the lid. Let stand 10 minutes.

Pour melted butter over rice. Let stand 5 minutes. Fluff with a fork and serve in a heated dish.

TURKISH GREEN BEAN SALAD

1 lb. fresh green beans, cut into one-inch lengths
3 Roma tomatoes, quartered
1 medium onion, chopped
3 tbsp. olive oil
½ tsp. salt
½ a lemon, juiced
1 tbsp. dry mint leaves

Layer green beans first, onions second, and arrange tomatoes on top in a saucepan that has a tight-fitting lid. Add salt, lemon juice, and olive oil. Sprinkle with dried mint. Cover with lid and cook over low heat without stirring for 25 minutes. Let cool. The olive oil and lemon juice make a dressing for the salad. Garnish with a light dusting of grated lemon peel and serve at room temperature.

DESSERT

Grapes, pistachios in the shell (the best pistachios are from Antep or Siirt), pomegranate arils (seeds).

She will protect Roberta while he returns to perform reconstructive surgery for child refugees and he will pay off her student loans. What could go wrong?

Readers who like novels with characters who must find strengths within themselves to overcome their difficulties will enjoy this story. They’ll learn different cultures’ approaches to families, marriages, and finances, about the Kurds who fought beside Americans in Iraq, about refugees, and about abuse. They will also learn about the power of love.

Note to readers of sweet romance, this book has an open door love scene between a married couple.

Eris Field was born in the Green Mountains of Vermont—Jericho, Vermont to be precise—close by the home of Wilson Bentley (aka Snowflake Bentley), the first person in the world to photograph snowflakes. She learned from her Vermont neighbors that pursuit of one’s dream is a worthwhile life goal.

As a seventeen year old student nurse at Albany Hospital, Eris met a Turkish surgical intern who told her fascinating stories about the history of Turkey, the loss of the Ottoman Empire, and forced population exchanges. After they married and moved to Buffalo, Eris worked as a nurse at Children’s Hospital and at Roswell Park Cancer Institute.

Tasty Tuesdays–Blissful Burgers from Becky Van Vleet

Today’s Tasty Tuesday recipe is from author Becky Van Vleet, who’s sharing a family favorite—Burgers with a twist!

 

Blissful Burgers

Ingredients:

1 ½ pounds ground beef

4 slices dry bread soaked in water, then squeezed out

1 beaten egg

1 tsp salt

½ tsp pepper

½ tsp garlic powder

2 T milk

Directions

Add all ingredients to ground beef and stir until completely mixed. Shape into patties. Grilling is preferred, but pan frying works as well. Add your favorite condiments with a healthy bread and you will want to cook these frequently. Delicious!

This recipe originates from my Polish paternal grandmother, Elizabeth Holeva Troyan. When she would visit our home when I was a young girl, I always thought her hamburgers were “spiced” up a bit more than other hamburgers I ate. It wasn’t until I became an adult that I found out that she had her own recipe, and that, yes, indeed, they really were spiced up in her own special way. I chose a family recipe because I am all about creating and preserving family memories, the theme of my website. In fact, my first children’s picture book, Talitha, the Traveling Skirt, was inspired by a true family story. We have had a little red plaid skirt that has been traveling in our family for more than 70 years, spanning three generations. And this family recipe has been “traveling” around as well!
