This is a good “pantry” meal–which is a dinner where you use items from your refrigerator/pantry to create a healthy, tasty dish.

My recipe was created for substitutions. Any type of vegetables will do. You can even use canned vegetables if you drain them well. Also, any type of cream soup works. I am fond of cream of celery and mushroom for pot pies.

If you do not have fresh turkey/chicken, substitute chicken in a can or even tuna in a pouch.

Let your creativity be your guide.

Pantry Pie

2 cups frozen mixed vegetables, thawed
1 cup cooked turkey or chicken, cut up
1 can condensed cream of chicken soup
1 cup milk, divided
1 cup Bisquick Original Baking Mix
1 egg

Preheat oven to 400° F.

In large bowl mix vegetables, turkey, soup, and ½ cup milk. Pour into ungreased baking dish.

In medium bowl whisk together Bisquick, ½ cup milk, and egg until blended. Spread over vegetable mix completely.

Bake 30 minutes or until golden brown.

Is there anything better than homemade sweet and salty caramel corn? Not only does it taste delicious, the aroma that fills the air when you are cooking it is heavenly.

Baked Caramel Corn
Nonstick cooking spray
24 cups air popped popcorn
1 cup (2 sticks) butter or margarine
2 cups firmly packed brown sugar
½ cup light or dark corn syrup
1 tsp. salt
½ tsp. baking soda
1 tsp. vanilla extract

Preheat oven to 250°F.

Coat bottom and sides of large roasting pan with nonstick spray. Place popped popcorn in roasting pan.

In saucepan, slowly melt butter. Stir in brown sugar, corn syrup, and salt. Heat to a boil, stirring constantly. Boil without stirring 5 minutes. Remove from heat. Stir in baking soda and vanilla.

Gradually pour over popped popcorn, mixing well. Bake for 1 hour, stirring every 15 minutes.

Remove from oven, and cool completely. Break apart and store in tightly covered container.

Chris Pavesic is in the virtual kitchen today with a yummy fruit bread.

Enjoy this delicious and easy bread any time of the year. Fresh or frozen blueberries work great. Make extra, the bread freezes and thaws beautifully.

Lemony Blueberry Bread

¾ cup brown sugar
2 tbsp. milk
1 tbsp. vegetable oil
6 oz. blueberry yogurt
1 large egg
1 tsp. almond extract
2 cups all-purpose flour
2 tsp. baking powder
1 cup blueberries (fresh or frozen)
1 tbsp. all-purpose flour

Preheat oven to 350ᵒ F.

In a medium bowl, stir together sugar, milk, oil, yogurt, egg, and extract. In a separate bowl, combine flour with baking powder. Add the dry ingredients to the wet ingredients and stir until combined.

In a small bowl, toss blueberries with 1 tablespoon of flour.

Fold blueberries gently into batter.

Pour the batter into a greased 9 x 5 inch loaf pan. Bake 50 to 55 minutes or until a toothpick inserted into the center of the loaf comes out clean. Allow bread to cool for 10 minutes before turning onto a rack to cool completely.

Lemon Glaze (optional)
⅓ cup fresh lemon juice
⅓ cup white sugar

Combine lemon juice and sugar in a small saucepan. Cook over medium heat until sugar is dissolved and then cook an additional 3 minutes. Let glaze cool a bit. Poke small holes in the top of cake and then pour glaze over the bread before removing it from the pan.

Fantasy author Chris Pavesic returns to the Tasty Tuesday kitchen with some Easy Blueberry Muffins for breakfast.

BREAKFAST GOODIES

When writing it is nice to have some quick & easy recipes to make for my family. Because of the fresh, local fruit and yogurt these muffins are healthier than most and go terrific with a cup of hot coffee.

The muffins are naturally sweetened with seasonal, local fruit (blueberries.) A touch of sugar is added to help cream the butter and is also sprinkled on top. You can eat them warm or prepare them the day before for a breakfast treat.

Chris Pavesic’s Quick & Easy Blueberry Muffins

½ cup butter, softened
¼ cup granulated sugar
2 large eggs
1 tsp. vanilla
2 tsp. baking powder
¼ tsp. salt
2 cups all-purpose flour
1 cup vanilla yogurt
2½ cups fresh blueberries
1 tbsp. granulated sugar for topping
extra butter for greasing the muffin pan

Preheat oven to 350° F.

Grease muffin pan with butter.

Mix butter until creamy in a medium-size bowl. Add sugar and beat until pale and fluffy.

Add eggs, beating well.

Stir in vanilla, baking powder, and salt.

With spoon, fold in half of flour then half of yogurt into batter; repeat. Fold in blueberries. There is no need to over-mix it.

Spoon into muffin cups and sprinkle sugar topping onto each muffin.

Bake 15 to 20 minutes, until golden brown and springy to touch.
